Costa Rica's legendary Aquiares Estate took this lot for a processing journey of many months! Ripe cherries are wrapped in heavy-duty plastic to remove oxygen and capture heat, then kept in greenhouses to promote thermophilic fermentation. After a min. of 3 days, cherry is then sun dried for 15 days and sealed for 3 months to age.
This coffee is grown in Costa Rica's actively seismic Turrialba region known for its sugarcane and cattle. Heavy rainfall prompts an early harvest, making Turrialba a premium and valued supplier of the national and international market.
