About the Producer:

"I have grown with the coffee plant", Silvestre told us when asked about his motivations for growing coffee.  There isn't another phrase that could express better Silvestre's feelings better than this one.  His experience allows him to produce high-quality coffees and he hopes to pass this knowledge along to his youngest son, which lives with him and his wife Olga.

This lot is mainly made of the well-known Caturra variety, very common in the area nad up to this day a great combination of quality and resistance to diseases.  Silvestre harvests his cherries during the day and depulps them in the afternoon/evening.  He then leaves the parchment to ferment in open cement tanks for 36 hours, regularly checking fermentation process.  After which he washes the beans and puts them to dry.

In addition to the coffee farm, Silvestre and Olga work in the small store selling groceries to their neighbours.  Like themselves, other families in Nuevo Trujillo have other ways to obtain incomes, like livestock and growing vegetables.

Regarding the zone, Nuevo Trujillo is a small community covered by cloudy forests with large tree species, such as cedar, laurel, romerillo and others.  Asking for the meaning of "Quanda", Silvestre told us that there is a stream near to their farm that many yeara ago used to have a high flow of water that didn't allow people to cross it to reach their farms and villages, so people used to wonder, "when will it pass, when will it pass.  This curious story tells us not only about the name of the farm but also about how the landscape and water are so integral to the ecosystem.  Fortunately Sylvestre loves trees and does his best to preserve them which helps to regulate the water in the ecosystem.

Sylvestre is an important figure in Nuevo Trujillo community,  not just because he runs one of the main local convenience stores where neighbours can buy essential groceries but also because he helps other neighbour farmers find better markets for their coffees.

Canada Post Strike

CUPW has issued a strike notification to Canada Post.  They have yet to say whether this will be a rotating strike or whether it will be a nationwide shut down.  During this time we are going to continue to try and offer free shipping using wither Purolator or UPS so that our customers can continue to ensure that they get there parcels in a timely manner.  Although we would like to say that we will be able to offer this service to all of our customers for some orders this is simply not feasible.

We hope that this strike will not last for long and hope that you will continue to support our business during these difficult days.  We appreciate your patience and understanding in these matters.
