ABOUT THE PROCESS

Cherries are floated to sort. With pulp remaining intact, beans are sun-dried for two days on a ceramic floor and then transferred to raised African beds for 10 days.

The San Isidro 35 varietal is a cross between the Timor Hybrid CIFC 832/2 and Villa Sarchi developed by Starbucks at their 240 ha. farm Hacienda Alsacia in San Luis, Sabanilla, Alajuela, off the slopes of the Poas volcano, about 45 minutes from San Jose. Hacienda Alsacia is a working farm that also serves as a global research and development site for Starbucks. San Isidro 35 was one of six varietals Starbucks produced in tandem with their agronomy team in response to the rising impacts of climate change (the varietals are resistant to diseases like coffee leaf rust with special features around quality, productivity, taste and higher yield). The agronomy team planted and monitored the varietals and hybrids for at least six generations before they were ready for distribution to farmers, which takes about 12 years.
