Processing: First step: making a large tea, using 9kg of ground leafs from Juanilama. The tea was left to rest overnight, and the following day added sugar at 5% concentration and also Mosto, the resulting microbial inoculate from anaerobic natural fermentations. The microbial culture was left to grow and feed on the sugars for three days. Then it used this culture to inoculate fermentations tanks at 5% v/v with de-pulped coffee and water. After that coffee was thoroughly washed and then sun-dried for 16 days, and finished drying in Guardiola for 1 extra day.
