Harvest: Selective Mechanized: The harvest of this coffee was done by selective mechanized harvesting. In selective mechanized harvesting, the coffee is harvested by a specialized coffee machine, and the beans are dropped by a set of pallets that vibrate at a certain frequency so that only the ripe beans fall onto the conveyor belt to later go to the container that is tipped onto the cart and sent to the other stages.
Preparation: Natural Wet Separated - The cherries were prepared in the natural wet separated method. The natural wet separated method consists of keeping the coffee with the skin separated by density through water. This way, the ripe and unripe coffees are separated from the "dry" ones. This method can be done using a mechanical washer or using water tanks.
Fermentation: Anaerobic - The processing of this coffee was done by anaerobic fermentation. Anaerobic fermentation occurs after the coffee cherries are in a container without the presence of oxygen where microorganisms consume the sugars and phenolic compounds from the cherries. In this process, microorganisms multiply in the absence of oxygen, which, in turn, bring and highlight exotic flavors to the coffee. The gases emitted are expelled through a valve in the tank, providing greater control over fermentation.
